A SPECIAL TRIP FOR STUDENTS OF THE CULINARY ARTS
You’re devoting your life to follow your passion for food. You’ve learned the techniques of cooking and have tasted a broad range of foods . Now you’re ready to dig a little deeper . You’re prepared to experience quality ingredients and learn how to distinguish the fine differences among regional products. You want to understand how small producers use centuries of tradition and avoid “sameness” that results from industrialization.
This 5 day/6 night trip offers the opportunity to explore the San Lorenzo market in Florence, the grandest marketplace in all of Tuscany where you will purchase all the ingredients for cooking in class. There is a visit to the Perugina Chocolate fratoria in Perugia followed by a wine tasting and a visit to one of the best pizzerias . We will be visiting an artiginal beer maker and attend a demonstration of Salumi making in the region of Norcia most famous for Salumeria. We attend a presentation on umbrian truffles and participate in a hunt for truffles . You’ll visit the small dairy farm where you will witness a parade of sheep being milked for the production of pecorino cheese & ricotta. This region produces one of the finest olive oils in Italy. You’ll attend a demonstration of the olive oil making process and learn how to evaluate extra virgin olive oils.
Everyday will include the opportunity to cook in the kitchen of Cucina della Terra with all the local fruits, vegetables, meats, grains, beans, olives & olive oil and of course, you’ll be making pasta.
You’ll return home with first hand experiences which will put you a few notches above your peers. Take advantage of lower airfares and accommodations because we are traveling at the end of the season.
